Refinishing rather than replacing keeps the boxes you already have and changes the part you actually look at, and on a kitchen with joinery worth keeping it is a fraction of a remodel. The frames stay where they are; the doors and drawer fronts do the traveling.

Why the doors come off

Doors and drawer fronts are removed, labeled, degreased, sanded and sprayed flat in a controlled setting, then reinstalled on their own hinges in their own openings. Nobody can brush a raised-panel door on its hinges and get a surface without marks in it. The profile alone guarantees a run somewhere.

The kitchen stays usable while that happens. It looks strange for a few days with the fronts gone, and that is the whole disruption.

What to expect if you want this

The number that drives the price is how many doors and drawer fronts there are, not the size of the room, so it is worth counting them before you call. Cooking grease is the other variable: a kitchen that has been used hard needs more degreasing before anything will bond, and that is judged in person.
